Russian Sirniki (cheese Pancake)
Growing up, this was one of my favorite breakfasts! I'm not sure if non Russians know this, but we are obsessed with dairy! So much so that when we make pancakes 90% of the ingredients are dairy.
The main ingredient is farmers cheese which can be purchased at most groceries. It's simular to cottages cheese but is more solid.
Start by crumbling the cottage cheese into a bowl.
Add a table spoonful of sour cream.
Break and beat in an egg.
Stir in 1/4 cup flour.
Typically people add raisins but sometimes I like to do cranberries instead.
On a grease pan, add balls of the mixture and flatten by pressing down with a spatula.
Let it cook for 5 minues on low heat, the outer edge will begin to brown.
At that point you can flip them and cook for a few more minutes on the other side.
I like adding a dollop of sour cream on top! Cheese on cheese on cheese, maybe not for those lactose and tolerant!

Ingredients
- 1 package farmers cheese
- 1 egg
- 1 table spoon sour cream
- 1/4 cup flour
- 1/3 cup raisins or crazins
Instructions
- Stir all ingredients into a bowl
- On a greased pan, and cup size portions of the mixture
- Cook on low heat for 5-8 minutes until edges begin to brown
- Flip and cook for another 3-5 minutes
- Enjoy!
