Pure Mandarin & Honey Jelly Lollies

If you're looking for a healthier special occasion - Halloween, a children's party, or an everyday treat,

then these easy-to-make jelly lollies are the answer!

They are also a great gummy lolly treat for those who like to watch their sugar levels.

Vegan and gluten-free.

So surely are a much healthier option without missing out on your lolly fix.

To make these you only need three ingredients.

They are made using freshly squeezed mandarin juice.

The sweetener is natural honey.

But you could use a healthy powdered sugar substitute if you desire.

But personally, I love the hint of honey flavor with the citrus.

The setting agent is gelatin.

You could change the mandarin to orange juice if you prefer the orange flavor.

You will need fresh mandarins.

I have used spray-free organic mandarins.

Juice the mandarins.

You will need 2 cups of fresh fruit juice.

Strain the juice in a sieve to remove pips and bits.

Place one cup into a small pot with 4 tablespoons of honey.

Make sure the honey is a mild flavor like clover

as if you use strong-flavored honey it will overpower the citrus flavor.

 In a small bowl, sprinkle over the top the other 1 cup of juice and 6 Tablespoons of unflavoured gelatin powder.

 Let the juice slowly soak up the gelatin at its own pace. DO NOT STIR IT.

This process is called 'bloom'.

Bring the remainder of the juice and honey in the saucepan to medium heat.

Add the bloomed gelatin mixture.

Stir with a whisk until dissolved.

Set aside to cool.

You will need small silicon molds.

(Small chocolate, ice cube, or lolly types).

Place the cooled juice mixture in small jug lots to pour into the molds.

(These gummy lollies are great fun for the kids to make!)

 Place on trays in the fridge overnight to set.

The next day remove the lollies from the molds.

 The pure mandarin and honey jelly lollies keep well in a covered plastic container in the fridge. And they don't stick together.

These citrus sweets are a huge hit with gummy and jelly lolly lovers.

As a bonus, they are pretty to look at, yum to eat, as well as healthy!

Tips
  • You can substitute the mandarin juice for orange.
