Strawberry Banana Pancakes

My kids, like all kids I’m sure, love pancakes for breakfast. I always to try to sneak in some fruits with it for some added nutrition. I usually like to top my pancakes with fresh fruit and thought it wouldn’t it be great to add it in the batter as well? I can sneak in some additional nutrition and flavor. The kids loved the addition and the strawberry banana flavor was a hit! And, it’s finally Spring and the strawberries are coming in strong so here’s a strawberry and banana pancake for you. Ingredients

  • 1 1/2 cups all purpose flour
  • 1 tbsp granulated sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1 small ripe banana, mashed
  • 2 large eggs
  • 1 cup plus 2 tbsps 2% milk
  • 3 tbsps unsalted butter, melted
  • 1 tsp vanilla
  • 2 cups strawberries
  • 1 banana, sliced
  • Butter or vegetable oil for cooking pancakes
  • Maple syrup for pancakes
Instructions

Take a cup of strawberries and finely dice them for the pancake batter. Take the other cup or strawberries and slice them for topping the pancakes.
In a large bowl, mix together the flour, sugar, salt and baking powder. Add in the mashed banana, milk, eggs, melted butter and vanilla. Whisk to combine. Set aside.
Heat up a large skillet over medium heat.
Spoon a ladle full of batter into the skillet and repeat. I can make 4 pancakes at a time in my skillet. Top the batter with diced strawberries. Cook the pancakes until you start to see bubbles appear on the top and it starts to look slightly dry. Flip the pancakes and cook for another minute on the other side.
Repeat until all of the batter is used up.
Serve the pancakes warm topped with additional sliced strawberries and bananas and lots of maple syrup.
