You will need:


  • flour
  • baking powder
  • salt
  • sugar
  • milk
  • vanilla extract
  • 1 egg
  • 4 tbsp melted butter
  • 2 medium bananas, mashed
  • chopped pecans
  • vegetable oil
  • Plus more pecans and sliced bananas for serving

In a large bowl, combine flour, baking powder, salt and sugar in a medium bowl.


Make a well in the center of your flour mixture and add the milk, egg, melted butter and mashed bananas.


Stir the banana mixture into the dry ingredients well, then stir in as many pecans as you desire into the pancake batter.


For a thicker batter consistency, let your pancake mix rest for 30 minutes.


Place a skillet over medium heat and brush with oil.


Once the skillet is hot, reduce heat to medium-low and pour mixture into the skillet, about 1/3 of a cup batter.

Cook until many bubbles appear on the surface of the pancake, 2-3 minutes, then flip and cook an additional 2-3 minutes on the uncooked side.


Place the finished pancakes on a plate and keep warm by setting in your oven on the lowest setting. (You can also preheat the oven and then turn it off and just allow them to sit in the warmed oven.)

Serve these delicious banana walnut pancakes topped with slices of banana, lots of butter and additional pecans. Or for something different, serve with peanut butter or chocolate chips on top!
