I have been on a sour dough journey which I intend to share but since it is an involved process I wanted to perfect my loafs first! When you have sour dough bread, you need sour dough starter.

When you don't actively need it, store it in the fridge so that it goes dormant. You can store it in the fridge for a few weeks without issue. When you take it out, it will have this liquid on top. Congrads! that is hooch, you just made alcohol.

Pour off the hooch and add equal parts flour and warm water. I always go with 1/3 a cup.

The yeast will react to warm water pretty quickly but boiling will kill it.

Mix it all together and it will double/triple in size in the next couple hours making bubbles, this is how you know it is ready to make bread with.

Since feeding the yeast requires it to grow, you will need to discard some of it otherwise it will grow exponentially! I usually make pancakes or waffles on a weekly basis and then give it to the kids for breakfast throughout the week.

These are the same ingredients as the waffles I make but sometimes I use cookie cutters for fun shapes!

make sure to spray the cookie cutters with cooking spray so it doesn't stick.

Bake on one side for about a minute, you may need a knife to get the cutter off.

Flip and cook on the other side for another 30 seconds.
