Juicer Leftover Muffins

If you have a juicer, you know that there is a lot of leftover material, meaning dried-out shredded pieces of fruits and vegetables used for preparing the juice. I’m using these leftovers for these yummy muffins. The fruits and vegetables need to be peeled and pitted before you put them in the juicer.

Put all the dry ingredients in a mixing ball: flour, baking powder, sugar, cinnamon, salt. Stir well.

Cut the butter stick to small pieces and put in the mixing ball

Using your hands, rub the butter into the dry materials until the flour gets oily. It usually takes about 2 minutes. You know when you're done when there are no more butter chunks, and the flour looks yellowish.

Add the condensed milk, the milk and the eggs. Whisk a little bit jut, so the batter gets damp. Add the juicer leftover and mix well. If it’s too dry, add ¼ cup of milk

Fill about ¾ of each mould

Bake for about 15 minutes

Ingredients

  • 2 cups of shredded juicer leftovers, a combination of carrots, apples, pears, and beet. This amount is achieved by preparing 4 cups of juice.
  • 2 cups of all-purpose white flour
  • 1 tbl spoon baking powder
  • 2/3 cup of sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 2 eggs
  • ½ cup of condensed milk
  • ½ -3/4 cup of milk
  • 1 stick of cold butter

Preheat your oven to 350F

Arrange muffin moulds on a cookie pan

Sprinkle with cinnamon and sugar. I fill a seasoning shaker with four tbl spoons of sugar and one tbl spoon of cinnamon and shake well. This amount is enough for numerous muffin batches.
Bake for about 15 minutes
