Three simple steps is all it takes to create these yummy mini muffins.

Blend the bananas, honey, peanut butter, egg, milk, Greek yogurt, and vanilla in a blender until smooth.

Mix the wet ingredients with dry ingredients, fold in chocolate chips, and scoop into 24 mini muffins.

Top with extra chocolate chips because...why not?!

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3 medium ripe bananas
  • 1/4 cup honey
  • 1/4 cup peanut butter
  • 1 tablespoon vanilla
  • 1 tablespoon olive oil
  • 1 egg
  • 1/2 cup nonfat plain greek yogurt
  • 1 tablespoon low-fat milk
  • 1/2 cup chocolate chips, plus more for topping
Instructions

Preheat oven to 350 degrees F and spray a 24 mini muffin tin with nonstick cooking spray.
In a medium bowl, whisk together flour, baking soda, cinnamon and salt.
Add bananas, honey, vanilla, oil, egg, milk, peanut butter and yogurt to a blender. Blend on high until well combined, smooth and creamy.
Add wet ingredients to dry ingredients and mix until just combined. Gently fold in chocolate chips.
Divide batter evenly into muffin tin, sprinkle each muffin with a few more chocolate chips and bake for 12-15 minutes.
Cool muffins for 5 minutes then remove and transfer to a wire rack to finish cooling.
