In 2024 we are working out, we are hitting our goals, and we are focusing on our protein and fiber intake! These chocolate banana protein muffins are so moist and delicious. Not only are they packed with both protein and fiber, they are also healthier for you compared to a regular muffin. This is because they are made with oat flour and honey, rather than all purpose flour and granulated sugar. Nothing wrong with those ingredients but we are cleaning up our recipes a little! So no need to feel guilty eating chocolate for breakfast or a post workout snack.

Ingredients

  • 2 ripe bananas
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 cup honey
  • 1/2 cup oat flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder 
  • 2 scoops chocolate protein powder  
  • 1/4 cup chocolate chips
Instructions

Preheat oven to 350° and grease a muffin tin.
In a bowl, mash the bananas.
Add the egg, vanilla and honey.
Stir in the oat flour, baking soda, baking powder, and protein powder until well mixed.
Fold in the chocolate chips.
Add to greased muffin tin and top with additional chocolate chips.
Bake for 15 minutes or until a toothpick comes out clean.
