Blueberry Banana Protein Muffins

I have another delicious protein muffin recipe for you! The double chocolate banana muffins in my last post are hard to beat, but I think I did it with these blueberry banana protein muffins. They have about 8.5 grams of protein per muffin, so pair a couple of them with some eggs for breakfast and you have a protein packed breakfast. You can sub the Kodiak cake pancake mix with oat flour or regular flour instead, the muffins just would not have as much protein. You can also switch out the blueberries with another fruit such as raspberries or strawberries.

Ingredients

  • 2 ripe bananas
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 cup honey
  • 1/4 tsp cinnamon
  • 1/2 cup Kodiak cake pancake mix
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder 
  • 2 scoops vanilla protein powder 
  • 1/3 cup blueberries 
Instructions

Preheat oven to 350° and grease a muffin tin.
In a bowl, mash the bananas.
Add the egg, vanilla and honey.
Stir in the cinnamon, kodiak cake mix, baking soda, baking powder, and protein powder until well mixed.
Fold in the blueberries.
Add to greased muffin tin.
Bake for 12-15 minutes or until a toothpick comes out clean.
