Baking Tips:

This is not an overpowering flavor of the cake. It has a nice subtle lemon flavor, but for someone like me…I LOVE lemon. So, I like to add more lemon zest to the batter. But, try not to add more lemon juice because this can affect the texture of the cake.

Loosely place a foil tent on top of the cake while baking if you start to notice the top is browning too fast.

Place a piece of foil under your cake before glazing. Doing this will help catch any dripping glaze from the cake so you won’t have a huge mess.

Poppy seeds will absorb some of the liquid that they are being soaked in, but it won’t make a noticeable difference.

How To Tell When My Cake Is Done Baking?

You want to make sure to bake the cake for the full time listed, and it should be baked perfectly. However, you can also use a toothpick to place into the middle of the cake and pull it out. If there is still wet batter, you can bake for a bit longer.

How To Freeze Lemon Poppy Seed Bundt Cake?

You will want to first wrap the cake in plastic wrap and then in another layer of foil. Place it in an air-tight container or gallon Zip Lock bag and store it until you want more. This recipe can typically last for 3 months in the freezer.

When you cut your cake, you may want to know that the sides will begin to lose moisture if not stored properly. So, make sure to place the cake into an airtight container or Ziplock bag.

How To Make Lemon Poppy Seed Coffee Cake

Step 1. Place the rack in the middle and set it to 350 degrees. Grease your bundt pan.

Step 2. Add the butter and sugar into a large bowl and combine. Add in the remaining wet ingredients and combine.

Step 3. Combine your dry ingredients in another bowl before slowly combining them with the wet ingredients until smooth.

Step 4. Add to the prepared pan and bake for 45-50 minutes. Check with a toothpick for doneness.

Step 5. Take out and transfer to a rack to cool for 30-40 minutes. Once cooled, take it out of the pan and top with the glaze. Enjoy!

Coffee Cake Ingredients:
  • cooking spray Non-stick
  • 1 cup butter unsalted, softened to room temperature
  • 1 1/4 cup granulated sugar divided
  • 1 tsp real vanilla extract
  • 3 large eggs room temperature
  • 1/3 cup lemon juice
  • 3/4 cup sour cream
  • 4 cup flour
  • 1 1/4 tsp baking soda
  • 1 1/4 tsp baking powder
  • 2 Tbsp poppy seeds
  • 1 Tbsp lemon zest preferably organic
Lemon Glaze Ingredients:
  • 1 cup powdered sugar
  • 1/8 cup whole milk *Add additional milk a little at a time if necessary, to reach desired consistency
  • 1 Tbsp lemon juice fresh

Put the oven rack in the middle of the oven and set it to 350 degrees. I like to use a standard-size bundt pan and grease it with some non-stick spray. Set aside.
In a large mixing bowl, add the butter and sugar and combine. Put in the vanilla, eggs, lemon juice, and sour cream, and combine again until smooth.
In another bowl, add the flour, baking soda, baking powder, poppy seeds, and lemon zest and combine. Gradually add your dry ingredients into your wet and combine again until fully incorporated.
Pour the prepared batter into the prepped pan and set in the oven for 45-50 minutes or until the top is light brown. Check it with a toothpick to see if it’s done.
Take out and transfer to a wire rack to cool for 30-40 minutes. Once cooled, take it out of the pan and cut it into 2-inch pieces. Top with some lemon glaze and enjoy!
