These rainbow unicorn cupcakes are easy to make, even if you aren't a professional cake decorator. This recipe makes the cupcakes and frosting from scratch, but you can use a boxed cake mix if you want.

Instead of making the decorations from fondant, I used the Wilton unicorn cupcake set (this makes 6, so you'll need two packs). I also added white edible glitter for some sparkle.

For the frosting, I used the Wilton Tri Color tip to make it easy to pipe three colors. This gives it a fun swirl and makes them look professional.

These unicorn cupcakes are perfect for birthday parties. However, we made them just for fun because they are so cute! You can also make the cupcakes from a boxed mix.

Ingredients
For the Cupcakes
  • 2 1/2 cup all purpose flour
  • 1 3/4 cup white sugar
  • 1- 3.56 oz box of vanilla pudding
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 4 ounces cream cheese, softened
  • 4 egg whites
  • 1/2 cup vanilla coffee creamer
  • 1 teaspoon vanilla extract
  • Yellow, pink, and teal food coloring
For the Frosting
  • 1 stick salted butter, softened
  • 6 ounces cream cheese, softened
  • 4 cups powdered sugar
  • 1 tablespoons vanilla coffee creamer
  • Yellow, pink, and teal food coloring
  • Edible glitter
Instructions
For the Cupcakes
Preheat oven to 350 degrees F. Spray a muffin pan or use liners.
Combine flour, sugar, pudding mix, baking powder, and salt in a large mixing bowl. Whisk dry ingredients together.
Use a hand mixer or stand mixer to cream butter for 1 to 2 minutes until light and fluffy. Add cream cheese and mix until combined. Then add the vanilla and mix well. Add the egg whites and mix on low.
Fold the dry ingredients into the wet ingredients. Slowly add the vanilla creamer and mix on medium for 1 minute.
Divide the birthday rainbow cupcakes recipe batter evenly between three small bowls. Add a few drops of food coloring to each bowl and stir. Add more food coloring until you reach the desired color.
Use a spoon to add spoonfuls of alternating colors into the muffin tins. Fill about 2/3 full. This will make tie dye cupcakes from scratch. You can use a toothpick to swirl the colors if desired.
Bake for 15-17 minutes or until a toothpick inserted into the center comes out clean. Transfer to a cooling rack and let cool completely before frosting.
For the Frosting
In a large bowl or stand mixer, cream the butter and cream cheese until light and fluffy. Add vanilla extract.
Slowly add the powdered sugar 1 cup at a time. Add a bit of milk between each cup of sugar. Beat for 1 minute or until creamy.
Separate the frosting into three small bowls. Add food coloring to each bowl and stir. Add more food coloring as needed until it's the desired color. Place one color of frosting in each of the three small piping bags. Place the three smaller bags into the large piping bag or connect to the tri-piping tip.
Pipe the frosting onto each cupcake. Add the unicorn ears and horns. Sprinkle with white edible glitter if desired.
