This pumpkin pie cheesecake concept really got my attention with the layers – it really would be so pretty. Baking a full cheesecake seemed like a lot of effort though, so this no bake pumpkin protein cheesecake in a jar was just perfect.

An easy and healthy single serve recipe for the pumpkin pie cravings and cheesecake cravings at once.


Ingredients for Pumpkin Protein Cheesecase Jar

This pumpkin protein cheesecake jar is made with 6 simple ingredients and is great for a quick healthy dessert for one.

Here’s what you need for the no bake protein cheesecake jar:

  • Crushed Graham Crackers
  • Vanilla Protein Powder – this makes for a sugar free protein cheesecake pot since it serves as the sweetener in place of sugar. I used the vanilla protein powder from Quest for this recipe.
  • Reduced Fat Cream Cheese for a low fat and low calorie cheesecake pot recipe
  • Non-fat Greek Yogurt to add the slightly sour flavor, creaminess and even more protein!
  • Pure Pumpkin Puree either from the can like Libby’s, or homemade. Make sure its not pumpkin pie filling though
  • Pumpkin Pie Spice

Tips for No Bake Pumpkin Protein Cheesecake Pot

  • Use room temperature ingredients
  • The cream cheese and yogurt need to be at room temperature to avoid lumps
  • Use pumpkin puree, not pumpkin pie mix; The pie mix is already sweetened, and not what you want here.
  • Beat the cream cheese well
  • For a light and fluffy texture to the protein cheesecake bites
  • Use a low speed to beat if using hand mixer
  • This prevents too much air from getting inside
  • Let no bake cheesecake pot cool completely

This pumpkin cheesecake pot is best served cold, and you want it to cool and set for at least 1 hour.

Ingredients
Crust:
  • 1 sheet Graham Crackers, Crushed, 15g
Pumpkin Layer:
  • 1/4 cup Pumpkin Puree, not pumpkin pie filling, 60g
  • 1 1/2 Tbsp Vanilla Protein Powder, Whey-casein, 8g
  • Pinch of Pumpkin Pie Spice
Cheesecake Layer:
  • 1 oz Reduced Fat Cream Cheese, Softened, 28g
  • 2 Tbsp Non-fat Greek Yogurt, 28g
  • 1 1/2 Tbsp Vanilla Protein Powder, Whey-casein, 8g
Instructions

Crushed graham crackers into bottom of jar.
Pumpkin Layer:
In a bowl, mix pumpkin puree, vanilla protein powder and pumpkin pie spice.
Transfer to jar, and smoothen top.
Cheesecake Layer:
If cream cheese is solid, place in a bowl and microwave for about 10 seconds to soften.
Place cream cheese in a bowl and whisk with a wire whisk or hand mixer (alternatively use a small food processor) until light and airy; About 30-45 seconds.
Add Greek Yogurt and beat again.
Add protein powder and mix.
Transfer to jar, and smoothen top.Sprinkle on more crushed graham crackers.
Place in fridge for 1-2 hours, then remove and enjoy.
