Sometimes I like to give myself food challenges- take a specific ingredient and then see what I can create with it. I had been ruminating on what to do with my bananas that began to brown, and so I threw together this Banana cake.

It’s simple, which means it’s easy to make, but is so perfect for a quick dessert that’s not too heavy! That classic banana flavor like banana bread is there, but what sets this apart is the Brown Butter Glaze that will keep you coming back for more! It’s simply perfection and definitely shouldn’t be skipped.

Ingredients
Banana Cake
  • 1/2 cup Unsalted Butter (melted)
  • 1 cup Brown Sugar
  • 2 large Eggs
  • 2 tsp Vanilla Extract
  • 1/2 cup Mashed Brown Banana (about 1 1/2 bananas)
  • 1 1/4 cup All-Purpose Flour
  • 1 tsp Baking Soda
  • 1 1/2 tsp Ground Cinnamon
  • 1/2 tsp Salt
Brown Butter Glaze
  • 1/4 cup Unsalted Butter
  • 1/4 cup Brown Sugar
  • 1/4 cup Powdered Sugar
  • 1 Tbsp Milk
Instructions

Spray an 8x8 pan with cooking spray, the preheat your oven to 350°.
In a medium bowl, whisk the 2 eggs, 1/2 cup of melted butter, 1 cup of Brown Sugar and 2 teaspoons of Vanilla extract together until smooth- just make sure that your butter isn’t too hot and won't cook your eggs.
Mash your 1/2 cup of Browned Bananas, then add into the sugar and butter mixture.
With a spatula, incorporate your dry ingredients into the mixture- 1 1/4 cup of Flour, 1 tsp Baking Soda, 1 1/2 tsp Ground Cinnamon, and 1/2 tsp Salt. Mix until just combined.
Pour into your 8x8 pan, then cook for 30-35 minutes, until a toothpick comes out clean in the middle. Set is aside and let cool while you make your glaze.
To make the glaze, cube your 1/4 cup of butter, then place in a small pot on medium heat. It's helpful (but not required) if you can use a pot that is light colored so you can more easily tell when the butter is browned.
Continually stir the butter until you see brown bits start to form, then take it off the heat and whisk in your 1/4 cup of Brown Sugar. After that's incorporated, add in 1/4 cup of Powdered Sugar and 1 Tbsp of Milk and whisk until no lumps remain.
Let the glaze cool off for about 10 minutes, then spread onto your banana cake. Enjoy!

    Could this be doubled and baked in a 9x13 pan?

      I haven’t tried that, but I don’t see why not. Just add a couple minutes to the bake time and then keep checking it from there
