You should try making there is no secrets to making bread.

I learned this bread as my first bread making and it became a staple in our breakfast table.

The kneading part is long but easy on your arms because you are not technically kneading, you are making folds every 10 minutes as explained in the instructions

In this video it shows well how the folds are made and how to do the envelope fold. Enjoy the process of brad making-Its rewarding

For the butter. We make honey butter. 1 stick of butter and a 4 tbsp of any honey. mix well and serve

The bread will be ready when you tap the bottom and will sound hollow.

Ingredients

For your Dough

  • 500 grams of flour
  • 5 Grams of Dry active yeast
  • 350 grams ofwater
  • 10 grams of salt

Instructions

Mix all ingredients together be careful for the salt not to touch the yeast. Once mixed we will start the 10 folds process
Now the dough is mixed here is what you will do: 1-Cover and rest for 10 mins
2- Do 10 folds from bottom to top. (see video)
3-Cover and rest for 10 mins
4-Do 10 folds from bottom to top.
5-Cover and rest for 10 min-
6-Do 10 folds from bottom to top.
7-Cover and rest for 10 min-
8-Do 10 folds from bottom to top. .
Step 9: Let is rest for 2 hours. The resting time depends on the weather you are making this. Tips: For me during winter it took about 4 hours to double the size and I left 30 mins between the folds on steps 1-8.
Step 10- Once double the size is time to make the envelope fold and shape your bread Lay it to rest for 40 mins. I already left inside the cast iron pot I will be using.
you can do any cut you want. Bake in 400 degrees- 25mins with a lid on and 25 mins with the lid off- If you dont have a cast iron pan you can add a cookie sheet on the lower rack with ice on it for the first 25 mins and than 25 mins without the ice sheet

Tips

  • Bread will be done when the bottom sounds empty. Knock on it Serve with butter or Honey butter
