Simple Banana Bread Recipe: It's So Easy Even The Kids Can Help
As much as we love bananas in our house there always seem to be a few we don’t get to eat before they start looking a bit too ripe. I’m sure you can relate! So, without a doubt, the best thing to do is freeze the bananas until I’m ready to bake this simple banana bread recipe.
This recipe is yet another family favorite from a recipe book my mom created many years ago.

Most often I will use a traditional loaf pan or bread pan when baking this recipe. However, there have been occasions when I’ve used a cupcake pan for ease of sharing this delicious treat with the family.
You could also use this mini loaf pan if you were perhaps making it to give away as a gift. A fresh loaf of banana bread makes a wonderful gift during the holidays or even as part of a self-care gift basket.
Any one of these ingredients would certainly add another dimension to this already delicious banana bread recipe:
.Chocolate chips
.Nuts
.Raisins
.Dried cranberries
.Spices such as cinnamon, nutmeg, or cloves make a nice addition too

Simple Banana Bread Recipe: It's So Easy Even The Kids Can Help

Ingredients
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 extra large eggs
- 4 medium bananas (soft & ripe but not rotting)
- 1 tsp vanilla
- 2 cups flour
- 1 1/2 tsp baking soda
- 1/8 tsp salt
Instructions
- Preheat the oven to 350 degrees.
- Grease two loaf pans (bread pans).
- Mash bananas with a fork or use a mixer.
- Add sugar, oil, eggs, and vanilla to bananas and mix well on medium speed.
- Sift together flour, baking soda, and salt. Add this to the above ingredients and mix thoroughly.
- OPTIONAL: Add 1 cup of chocolate chips, nuts, raisins, dried cranberries, or whatever your heart desires.
- Pour mixture into greased loaf pans.
- Bake for 25-30 minutes or until the bread is done. You can test to see if the bread is done by inserting a toothpick into the center of the bread. If the toothpick is clean upon removal the bread is done.

I already have bananas mashed and frozen. How much do you think 4 bananas will measure.... 11/2 cups?
