Basic Banana Bread

This is a really good basic banana bread with a rich, buttery taste, so if you have some ripe bananas you will need to keep this recipe in mind! The batter bakes into two yummy 8 x 4″ loaves.
Another interesting note is that I adapted this banana bread from a recipe that is said to be very similar to the banana bread served at the Disneyland Hotel! I have never stayed there or had their banana bread, so I can't vouch for that claim, but I do like the way this one tastes! :) One change I made though, is that I added chopped pecans into the batter.
Next time you have ripe bananas, you'll have to try this out and see what you think! :)
Basic Banana Bread

Ingredients
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 2 large eggs
- 2 teaspoons milk
- 2 cups ripe mashed bananas
- 1/4 teaspoon pure vanilla extract
- 3 cups unbleached flour
- 2 tsp. baking soda
- 1/2 tsp. salt
- 3/4 cup chopped pecans
Instructions
- Preheat oven to 350˚F. Grease and flour two 8 x 4" loaf pans; set aside.
- In large bowl, cream butter and sugar until well blended.
- Add eggs one at a time, mixing after each addition.
- Add milk, mashed bananas, and vanilla, mixing everything well.
- In medium bowl, blend flour, salt, and baking soda. Add these dry ingredients, a third at a time, to the wet ingredients, stirring until everything is blended.
- Fold in chopped pecans.
- Spoon batter into the prepared loaf pans and bake at 350˚F for 52 to 55 minutes, until toothpick inserted in center comes out clean.
- Cool loaves in pans for 10 minutes, then remove and cool completely on wire rack.
