There are hundreds or thousands of pumpkin smoothie recipes out there, and I am going to share my latest creation that is not only very pumpkin-y, but also very coconut-y and refreshing, and can be enjoyed throughout the year, not necessarily over fall / pumpkin season only.
I put it together very randomly by trying to use some leftovers I had around the fridge and the pantry, then worked on perfecting the ratios until this beautiful drink, rich in flavor and can also be a meal by itself.
It combines pumpkin, banana, coconut, almonds, and the rest is in the recipe below!
Reinvented Pumpkin-Almond Smoothie

Ingredients
For the smoothie
- 2 cups roasted or boiled and drained pumpkin, diced
- 1 banana
- 3 tablespoons almond butter
- 1 cup grated coconut
- 2 scoops collagen protein (optional)
- 2 cups water (adjust based on desired consistency)
- 1/2 tsp nutmeg
- 2 tsp cinnamon
- 1 tsp pumpkin spice
- 1-2 tsp honey
- handful ice
For the toppings
- handful toasted coconut flakes
- handful goji berries
- handful pumpkin seeds
- sprinkle cinnamon
Instructions
- Combine all smoothie ingredients in a blender and blend until smooth (adjust water quantity based on desired consistency)
- serve in cups or mason jars, add toppings, and enjoy
