Fall is all about pumpkin. Below are three copy cat recipes from Panera, Starbucks and Trader Joe's. Hope you love them as much as I do!

Ingredients
Panera's Squash Soup Copycat Recipe
  • 1 tablespoon extra virgin olive oil
  • 1 small yellow onion, diced (about 3/4 cup)
  • 2 pounds chopped butternut squash (about 6 heaping cups)
  • 3 small carrots, chopped (about 1 cup)
  • 3-4 cups vegetable broth
  • 2 cups apple cider or apple juice (do NOT use apple cider vinegar)
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon cinnamon
  • dash of nutmeg
  • 1/2 cup pumpkin puree
  • 2 tablespoons butter
  • 2 ounces low-fat (neufchatel) cream cheese
  • 1 tablespoon brown sugar, more to taste
  • salt to taste
  • heavy cream, optional
Starbucks Pumpkin Spice Latte Copycat Recipe
  • 3 cups milk
  • 4 tablespoons pumpkin puree (or to taste)
  • 2 tablespoon brown sugar (packed)
  • 1 teaspoon pure vanilla extract 
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 cup hot brewed strong coffee
  • Garnish:
  • sugar (to taste)
  • whipped cream
  • nutmeg
  • cinnamon
Trader Joe's Pumpkin Waffle Copycat Recipe
  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 2 large eggs, room temperature
  • 1-1/4 cups buttermilk
  • 1/2 cup fresh or canned pumpkin
  • 2 tablespoons butter, melted
  • Optional: Butter and maple syrup
Instructions
Panera's Squash Soup Copy Cat Recipe
In a large pot, heat oil over medium-high heat. Add onions and saute until translucent, stirring frequently.
Add squash, carrots, vegetable broth, apple cider, and spices.
Bring to a boil, reduce heat and simmer for 10-15 minutes, or until squash and carrots are soft.
Remove from heat and add pumpkin puree, butter, cream cheese and brown sugar.
Puree with a hand (stick) blender or in batches in a normal blender. Blend until very smooth.
Taste soup and add salt as desired. You may also add extra brown sugar or honey to achieve a taste closer that of Panera’s. You can also add a little heavy cream if you want a more decadent soup. If desired, add more vegetable broth to thin soup.
Return to burner over medium-low heat, if needed to heat the soup back up, and then serve immediately.
Starbucks Pumpkin Spice Latte Copycat Recipe
Place a saucepan over medium heat and whisk together milk, pumpkin puree, and brown sugar.
Cook, stirring frequently, until hot and steamy, but DO NOT BOIL.
Remove from heat, and whisk in the pumpkin pie spice and vanilla extract.
Whisk in the coffee and continue to whisk until frothy.
Pour between two coffee mugs and add sugar if needed.
Garnish with whipped cream and a sprinkle of cinnamon.
Trader Joe's Pumpkin Waffles Copycat Recipe
In a large bowl, combine the first 9 ingredients.
In a small bowl, whisk the eggs, buttermilk, pumpkin and melted butter.
Stir into dry ingredients just until moistened.
Bake in a preheated waffle maker according to manufacturer’s directions until golden brown.
If desired, serve with butter and syrup.
