Fresh Blueberry Ice Cubes for Mint Juleps
Who is ready for that 30 second race? You know the one! The Kentucky Derby is coming right up. The cocktail of choice has to be the mint julep. If you have not made one before, it is so refreshing! I can see why it became the drink of the Derby on hot spring days in Kentucky. My mint is already growing like crazy in the garden, and my violas are still looking so pretty atop drinks and desserts, so why not? Find the recipe below for a standard mint julep. I add a twist of making a mint simple syrup. It is very easy and I promise it does not taste like toothpaste. Here is the game-changer: Blueberry ice cubes! So easy, and so fun and different. Fresh Blueberry Ice Cubes for Mint Juleps

Ingredients
Blueberry Ice Cubes
- 1 1/2 C blueberries fresh or frozen
- 1/2 C water
- 2 Tbsp honey
- juice of 1 small lemon
Mint Simple Syrup
- 1 C water
- 1 C sugar
- 1 C fresh mint leaves, torn from stems
Mint Juleps
- 8 oz bourbon whiskey, divided by 4 glasses
- 3 blueberry ice cubes per glass
- 1 Tbsp mint simple syrup (more/less for taste) (see recipe)
- fresh mint leaves for each glass (muddle first)
Instructions
Blueberry Ice Cubes
- Blend all ingredients
- Pour in ice cube tray
- Freeze 3 hours or overnight
Mint Simple Syrup
- Combine all in saucepan and bring to a boil
- Reduce heat and simmer for 1 minute
- Remove from heat and let steep 30 minutes
- Remove mint leaves
Mint Julep
- Muddle mint leaves slightly.
- Pour about 2 oz bourbon in each cup
- Mix in simple syrup to each glass
- Add blueberry ice cubes
- Decorate glass with more fresh mint and/or violas if desired
Tips
- Gently muddle mint. Do not break apart the leaves roughly
