Cherry Tomato Jam
I love making jam, it’s something that is so simple to make yet so flavorful. You can also be incredibly creative and make jam out of almost any fruit and even many Vegetables.
This recipe I decided to make out of cherry tomatoes. I made them for a dish in the restaurant this week and it turned out incredible. Cherry tomatoes have a natural sweetness to them, so when cooked with some sugar and incredible herbs and spices it just enhances the flavor.
In the dish I used a grilled pita on the charcoal grill, goose liver also grilled on the charcoal grill and served the dish with the jam. Absolutely divine. You can use this jam in the mornings to eat with your morning toast, or even as a snack with crackers and cheese.
you’ll be surprised how tasty it is, maybe at first you think tomato jam? Sounds unappealing... but it’s. A beautiful jam with the taste of sweetness and loveliness that you get with any other fruit jam. I decided to use three colors of cherry tomatoes and each has a different taste and it provides more complexity to the jam, and of course it looks gorgeous as well. I hope you enjoy 😊

Ingredients
For the jam
- 500 grams cherry tomatoes
- 400 grams sugar
- 1 chili pepper or 1 tablespoon chili flakes
- 5 star anise
- 4 cinnamon sticks
- 3 thyme leaves
Instructions
- In a medium size sauce pot add all the ingredients into the pot.
- mix well on low here, cook for about 30 minutes or until jam consistency.
Tips
- After fully cooked, take out all the herbs and spices and store in a jar or tightly sealed box.
