Inspiration

As I’m sure you all have come to know, Phillip and I are lovers of spicy food or at least food with a kick. Last summer we were eating pineapple like it was our job and seemed to always have it in the house. We would make pineapple salsa, pineapple chicken bowls, and were basically living off of our pineapple taco sauce. Phillip was making a cajun pork tenderloin for dinner and instead of a sauce on top we decided to smother this in pineapple salsa. Let’s just say we were pleased with the burst of flavors!

Tools needed

There isn’t any specific tools needed for this Pineapple Pork Tenderloin recipe. Most things you would likely have: chopping board, knife, and frying pan.


Ingredients

Pork Tenderloin: If you prefer pork chops instead of a tenderloin, you can certainly substitute. But we love a juicy tenderloin slow cooking under a lid.


Pineapple: The main ingredient in my opinion for this Pineapple Cajun Pork Tenderloin. Bursting of fresh juicy flavor. Mango would be a good substitute for the pineapple.


Cilantro: I know many people aren’t big fans of cilantro but it really does provide a crisp taste to the pineapple salsa. You can lessen the amount if you would like but I definitely recommend keeping this in the recipe.


Red Onion: For any raw recipe, I prefer the flavor of red onion in comparison to a yellow or white onion. Both yellow and white onions are better for cooked recipes but you can substitute if you would like.


Cajun Spices: This is Phillip’s cajun pork blend. All of these spices mixed together and packed onto the pork gives this such a crisp crust on the outside of the pork tenderloin. This isn’t your typically cajun spice mixture but you will be happy with the result!

Step by Step

To start making this Pineapple Cajun Pork Tenderloin chop up your pineapple, red onion, and cilantro finely. Combine the ingredients into a bowl with a pinch of salt and mix well. Let rest in the fridge for at least 30 minutes before using. This will allow the salt to extract some of the juice from the pineapple and have the flavors blend together a bit. Next mix you spices together in a small bowl with oil. Begin to coat the pork tenderloin with a nice thick coat of the spices.


Over a medium flame, bring your saute pan up to heat. Add 2 tablespoons of oil to the pan and add the pork tenderloin. Sear each side for a few minutes and add a lid to the saute pan. Let cook for about 20-25 minutes or until the pork has reached an internal temperature of 145 degrees, rotating the pork every 7 minutes or so. Remove the pork from the pan and let rest a few minutes. Slice and serve over rice. Smother the pork slices with the pineapple salsa and enjoy!

Ingredients

Pineapple Salsa

  • 2 cup pineapple finely chopped
  • ½ red onion finely chopped
  • ¼ cup cilantro finely chopped
  • 1 pinch salt

Cajun Pork Tenderloin

  • 2 lbs pork tenderloin
  • 4 tbsp salt
  • 4 tsp garlic powder
  • 4 tsp onion powder
  • 2 tsp pepper
  • 3 tsp gochugaru
  • 3 tsp paprika
  • 3 tbsp olive oil

Instructions


Chop Pineapple Salsa ingredients and combine in a bowl. Add pinch of salt, mix and let rest in fridge for at elast 30 minutes
Combine Cajun Pork Tenderloin spice in a small bowl, add 1 tbsp of olive oil to the spice. Coat the pork tenderloin with the spices.
Add a saute pan over a medium flame and bring to heat. Add two tablespoons of olive oil and then add the pork. Sear on each side for a few minutes to get a nice crust. Place a lid on the pan and cook for another 20-25 minutes or until the internal temperature reaches 145°. Roatate the pork ever 7 minutes or so while cooking.
Remove the pork from the pan and let rest. Slice the tenderloin up and serve over your favorite rice. Smother the pork with the pineapple salsa and serve.
