Buckwheat Banana Bread

Buckwheat is such an underrated flour alternative! Not only is it gluten free, higher in protein, and lower in carbs, it is also much higher in B vitamins than regular flour! This buckwheat banana bread recipe is an awesome and irresistible way to enjoy a gluten free, vegan, and guilt free alternative to your regular banana bread indulgence.

This recipe gives you the option to add either chocolate chips or nuts to your banana bread. I prefer to add both! Which do you prefer? Chocolate chips or nuts in your banana bread?

Ingredients

  • 1 1/2 cups Buckwheat Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tbsp Cinnamon
  • 1/2 cup Sugar
  • 2 Overripe Bananas
  • 1/2 cup Tahini (or Almond Butter)
  • 1 tsp Vanilla Extract
  • 2 tbsp Maple Syrup
  • 3/4 cup Sparkling Water (keeps the banana bread soft, crucial since using buckwheat)
  • 1/2 cup Nuts or Chocolate Chips (optional)
Instructions

Preheat the oven to 350°.
Whisk together the flour, baking powder. salt. and cinnamon.
Use a blender to blend together the bananas, tahini, maple syrup, sugar, vanilla, and sparkling water.
Pour into the flour mixture, and mix to combine.
Fold in the nuts or chocolate chips if using.
Pour into a greased loaf pan, and bake for 45-50 minutes, or until an inserted toothpick comes out clean.
