Best Ever Pomegranate Guacamole
Fresh guacamole makes a great appetizer. In my experience, any variation is a guaranteed crowd pleaser. But the recipe for this best ever pomegranate guacamole creates an appetizer that is devoured within minutes, if not seconds. It's inhaled at my house. The sweet, juicy pomegranate seeds burst with flavor and add a beautiful contrasting pop of color to the creamy chunks of avocado. The zing from the lime juice, the bite of the red onion, the kick from the jalapeno and the distinctive flavor of cilantro elevate the dish to an impressive level. Served best with hot tortilla chips.

- In a medium-sized bowl, add cubed avocado, lime juice, red onion, cilantro, jalapeno and kosher salt. Stir to combine. If necessary, season with more salt to taste.
- Add two tablespoons of pomegranate seeds. Gentle stir until evenly distributed. Sprinkle the remaining tablespoon on top.
