Korean French Carrot Salad

In this French (ish) Carrot Salad recipe, rice vinegar and gochugaru takes this to a tart and sweet side dish that will add to any dish! This isn’t your ordinary French carrotte rape (French carrot salad)!


I hate carrots. I eat pretty much everything, but carrots (and blue cheese) just…ew. The texture. The bitterness. And then it’s randomly sweet! And it’s still really bitter! EW!


I used a food processor which really cut down on the time and it gets the carrots to the perfect thinness that soaks up all the goodness you will be using. If you do not have a food processor, I recommend using a mandoline. You gotta get the carrots thin as possible!

Ingredients

  • 8 oz carrots, finely grated
  • 6 tbsp rice vinegar
  • 2 tbsp sugar white or brown
  • 2 tsp gochugaru
  • 1 tsp toasted sesame oil
Instructions

Mix all the ingredients together. Adjust to season.

      Gochugaru is a coarsely ground Korean chili powder similar to crushed red pepper flakes in texture, traditionally made from sun-dried peppers without the seeds. Googled it.
