Gluten-Free Blueberry Cobbler
Nothing says summer like a warm fruit cobbler. Whether it's peaches, apples, or blueberries, you really can't beat a good cobbler with vanilla ice cream on top. I decided to go for the classic blueberry cobbler. This gluten-free beauty is also pretty healthy, well as healthy as cobblers go. The key to good cobblers is to serve it right out of the oven and top it with ice cream. When you do this, the ice cream melts into the cobbler and it is just delicious.
If you want to take this cobbler to the next level, I suggest adding honey or caramel sauce over the ice cream. I added honey for a healthier option and it really brought out the sweetness. This cobbler is the perfect dessert to end a summer bbq. Pair it with corn on the cob, a fruit salad and sausages for the perfect, classic BBQ!

Gluten-Free Blueberry Cobbler
Recipe details
Ingredients
- 2 tablespoons lemon zest
- 1 tablespoon lemon juice
- 1 cup gluten-free baking flour
- ¼ teaspoon xanthan gum
- ¾ cup granulated sugar
- ¼ cup unsalted butter
- 1 teaspoon baking powder
- ¼ teaspoon cinnamon
- ¼ teaspoon salt
- 1 room temperature egg
- 1/3 cup milk
Instructions
- Preheat oven to 350 degrees F and grease a pan
- Combine washed blueberries, ¼ cup sugar, and cinnamon in a bowl
- Mix together then pour into the greased pan
- In a separate bowl, combine the flour, xanthan gum, lemon zest, baking powder, and salt
- In another bowl, use an electric mixer to combine the rest of the sugar and unsalted butter
- Once combined, add lemon zest, lemon juice, egg and milk
- Beat with mixer for 1 minute until creamy
- Slowly add the dry ingredients and mix together
- Scoop 5-7 large biscuits over the blueberries
- Scoop 5-7 large biscuits over the blueberries
Tips
- Add vanilla ice cream!
