Don't you just love summer? I know I do, partially for the weather and partially for all the fresh, in season foods. With everything going on in the world, this summer feels a bit different, not as light and carefree. One thing we can do to spark a little joy in our lives during this time is bake! And why not bake with some of our favorite summer fruits, like raspberries and lemons. I created these healthier lemon donuts with raspberry glaze so that you can have a fun baking experience and create something "healthy" enough to enjoy for breakfast or a snack.
Healthier Lemon Olive Oil Baked Donuts With Raspberries N' Cream Glaze
Recipe details
Ingredients
For the Donuts
- 1/2 cup whole wheat flour
- 1 1/4 cup all purpose flour
- 1/2 cup white sugar
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 3/4 tsp salt
- 1 egg
- 1/2 cup plain Greek yogurt, nonfat
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- Zest 1 lemon
- 1/4 cup whole milk
- 1 tsp vanilla extract
For the Glaze
- 2 TBS raspberry purée
- 1 TBS heavy cream
- 1 1/4 cup powdered sugar
Instructions
For the Donuts
- Combine all dry ingredients in a large bowl
- Make a well in center of dry ingredients and carefully mix in wet, do not over mix.
- Pipe donut batter into greased donut pan.
- Bake at 350 for 10-11 minutes.
- Let cool on cooling rack.
For the Glaze and Assembly
- combine ingredients and mix well until a sticky glaze forms.
- Wait until donuts cool, then dip them in the glaze.
- Let glazed donuts dry on a cooling rack. Serve and enjoy
Tips
- If you don't have heavy cream for the glaze, you can use whole milk.
- To make the raspberry puree, put fresh raspberries in a blender with a small amount of milk and blend until smooth.
