A simple and delicious treat, perfect as a snack or as breakfast. And it's vegan, too!


When making these, you can substitute a lot of these ingredients freely.

For example, instead of using protein powder, you can use a flour of your choice, like almond or oat. Instead of using oat milk, use any other vegan milk, or any milk you like if you're not vegan. You can have it with the toppings, in which case you just throw any leftover nuts and fruit on top, or you can leave it without, it really doesn't matter!

What's important is that they're delicious, nutritious, and super easy to make!

I like to top mine with hazelnuts, cashew nuts, raisins, chia seeds, and flax seeds. These bars are great, warm or cold. You can just pop the whole batch in the fridge and grab one whenever you need something on-the-go. They keep well for about 5 days, depending on your fridge temperature.

All the fancy toppings on top are really just a decoration (although they do add a really nice crunch), so if you don't have any nuts and seeds at hand, don't let it stop you! They taste just as delicious without any toppings at all!

This is all you'll need to make these! Feel free to use any other flour instead of the protein blend - oat flour and almond flour work great.Lemon essence is completely optional.

This is a very moist and fudgy cake. When baking, you want the skewer or toothpick to come out fairly clean, but it will never be completely clean. Trust the process, 35 minutes in the oven should definitely do it, especially since there's nothing in this cake that can't be eaten raw.

Ingredients
For the breakfast bars
  • 2 ripe bananas
  • 1 apple, grated
  • 1 tbsp orange peel
  • 50ml (3 1/2 tbsp) freshly squeezed orange juice
  • 150g (2 cups) oats
  • 50g (4 1/2 tbsp) vegan protein blend (or oat flour/almond flour)
  • 100ml (1/2 cup) oat milk
  • 2tbsp honey
  • 1tsp baking powder
  • 60g (1/2 cup) dark chocolate, chopped
For the topping (optional)
  • 20g (2 1/2 tbsp) nuts and dry fruit mix, chopped
  • 1tsp chia seeds
  • 1tsp flax seeds
Instructions

Preheat oven to 180 celsius⁣ (356 fahrenheit)
Mash the bananas, grate the apple, squeeze and grate the orange, chop the chocolate⁣
Mix everything together⁣
Transfer to a 20x20cm (8x8 inches) square cake tin greased with cooking oil
Sprinkle the top with nuts and seeds, flatten a bit with a spatula⁣
Bake for about 35 minutes⁣
Remove from the oven and wait for the cake to cool down completely before cutting it into 16 pieces and transferring to a box to be stored in the fridge

    If you add honey, it is not a vegan recipe.

    To substitute, would you suggest pomegranate molasses or maple syrup? How would that change consistency or taste.
