Ya’ll have heard me rave about Japanese sweet potatoes time and time again. Well, they really are the best and most underrated sweet potatoes out there! What I love about them is that they hold their shape and don’t get too mushy like the traditional sweet potatoes can. They are also not quite as sweet, which makes them a bit more versatile. You can find them almost anywhere these days, so if you spot them, pick up a few and try them out!


Now this recipe is one you can literally throw together in no time and customize it to your own liking. The best part, you can serve it right in the same sheet pan you cooked the potatoes in! Its great for game day or for casual date night.

  • 2 Large Japanese sweet potatoes 
  • 1 tsp salt 
  • 1 tsp pepper
  • 1 tsp smoked paprika 
  • 1 tsp garlic powder
  • 1 tbsp avocado oil 
  • 1 lb ground beef 
  • 2 tbsp of Siete taco seasoning
Toppings
  • Cheese (vegan optional)
  • Avocados 
  • Salsa
  • Radishes
  • Green Onions
  • Cilantro 
  • Sour Cream (vegan optional)
Instructions
The How To:
Preheat your oven to 425 degrees and then line a large sheet pan with parchment paper. Next, cut your sweet potatoes in long, thick matchsticks and season them with avocado oil, salt, pepper, paprika and garlic powder. Bake them in the oven for 30 minutes. Once baked, flip them and put them under the broiler for 5-7 minutes on high. Be sure to keep an eye on them so they don’t burn. 
While the potatoes book, saute the ground beef in a cast iron skillet. Add the taco seasoning to the meat halfway through cooking. Add more to taste.
