Ingredients

  • 4 Large Golden Sweet Potatoes, peeled and sliced
  • 1 13.5 oz can Coconut Cream, non sweet
  • 6 T Butter or non dairy butter
  • 1 t Garlic, minced
  • 1 1/2 t Herbs de Provence
  • 1 t Arrowroot powder or constarch
  • 1 c Bacon, cooked and crumbled
  • Salt and Pepper
  • Chives
Instructions

Preheat oven to 400 degrees.
Layer sliced sweet potatoes in a buttered baking dish.
Sprinkled bacon over sweet potatoes.
In a medium sauce pan over medium heat, add coconut cream, butter, garlic, herbs de Provence, and salt and pepper. Heat until warm throughout.
In a small bowl, add arrowroot powder and a small amout of water and mix well. Add to the cream sauce and stir until thickened.
Sprinkle with chives.
Bake for 40-50 minutes. Until sweet potatoes are tender.

    So I take it you pour the cream sauce over the sweet potatoes, then top with chives and bake? The instructions don’t say what to do with the sauce.
