Bison and Bean Stuffed Peppers

Mix up your family dinners by trying ground bison instead of beef. Bison is a low fat alternative that can be used in pretty much any dish that includes beef. These stuffed peppers are an easy dinner the whole family will love. You can clean up your fridge by chopping up leftover veggies and adding them to the stuffing mix. Serve with a side salad or a rice dish.

Ingredients:

  • 1 pound ground bison meat
  • 1 can of refried bean
  • 6 bell peppers (use any color that you like)
  • 2 cups of shredded cheese
  • 1 chopped mediumtomato
  • 1 medium yellow onion
  • 2 tablespoons olive oil

Add olive oil to a pan on medium to high heat.

Chop onion and add to pan.

Add ground bison and add to pan. Cook until brown. Lower heat on pan.

Preheat oven to 350 degrees.

Add beans, 1 cup of cheese and tomato to the pan.

Chop the top off of the peppers and scoop out the inside seeds. Discard the top.

Place the peppers on a heat safe dish and fill with meat mixture.

Sprinkle the rest of the cheese on top.

Place the peppers into the oven for 25 mins to cook.

Let sit for 5 minutes to cool before serving. Makes 6 stuffed peppers.

Ingredients

  • 6 bell peppers

  • 1 tomato
  • 2 tablespoons of olive oil
Instructions

Preheat oven to 350 degrees.
chop the top off of the peppers, scoop out the seeds and discard the tops.
Add olive oil to a pan on med-high heat.
Add bison meat and chopped onion and cook until meat is brown.
Remove from heat and add half of the shredded cheese and the chopped tomato.
Add the meat mixture into the hollowed out peppers.
Top with the rest of the shredded cheese.
Cook in the oven for 25 mins.
Let cool 5 minutes before serving.
Tips
  • Serve with sour cream and salsa
