Spaghetti Squash Pizza

Using spaghetti squash to make pizza dough is seriously life changing! Such a yummy low carb alternative. Seriously, forget cauliflower crust - this veggie is where it's at!
Everyone has been making spaghetti with this squash, so why not try using it for a different Italian dish? It is seriously so easy and SO tasty. All the yummy flavors with less guilt!
I feel much lighter and super satisfied after having a couple slices. Top it with any of your favorite toppings. I opted for roasted peppers and onions - not super exciting, but my personal favs.

Spaghetti Squash Pizza
Recipe details
Ingredients
- 1 small spaghetti squash
- 1 tbsp olive oil
- 1/2 tsp kosher salt
- 1 egg
- 1/2 cup mozzarella cheese
- 7 tbsp flour
- 1 tbsp Italian seasoning
- 1 tsp garlic powder
- 1 - 2 cups pizza/tomato sauce
- 1 - 2 cups cheese to top
- toppings of choice
Instructions
- Preheat oven to 450 F.
- Slice the spaghetti squash in half, then drizzle with olive oil and season with kosher salt
- Place face down on a lined or non-stick baking sheet
- Roast for 30-40 minutes depending on size of squash. You want to be able to easily scoop out the strands.
- Scoop out the spaghetti squash and measure 2 cups
- Chop into smaller strands or quickly put in a food processor. I also like to strain the squash using a cheesecloth to release moisture (this makes the crust extra crispy!)
- Place the squash in a bowl and combine with 1 egg, 1/2 cup of mozzarella cheese, and 7 tbsp flour
- Season with Italian seasoning, and garlic powder
- Mix everything together and add more flour if needed (consistency should not be too sticky)
- Put the ‘dough’ on a lined baking sheet and flatten it - Note that the flatter you get it, the crispier it will be! Aim for 1/2 inch thickness.
- Place it in the oven for approximately 15 minutes then flip it
- Top the pizza with sauce, cheese, and toppings of choice, then cook it for another 12-15 minutes
- Enjoy!

The whole idea of not using dough is to get rid of the flour......even the little used here is too much.
I might try it but I will use fine almond flour instead of regular.
