Potatoes are a staple in everyone's pantry. They're inexpensive, versatile and easy to make. Here are three totally different recipes featuring the great potato.

Gratin Parmentier

This French dish features the American classic - meat and potatoes - turned up a notch.

The creamy bechamel sauce and cheese make this one dish something special.

Twice Baked Potato Casserole

This could be served as a side dish or as the main course served with a salad.

Keeping the skin on the potatoes really enhances the flavor.

Crockpot Potato Soup

Fill your family's bellies with this rich and creamy slow cooked soup.

For a creamer soup, place the soup in a blender for a smooth bowlful. Top with cheese, bacon and green onion to take it to the next level.

Ingredients
Gratin Parmentier
  • 3 large Russet Potatoes peeled, whole
  • 1 pound Ground Beef
  • 2 tablespoons Fresh Parsley, minced
  • 1 teaspoon Paprika
  • Salt and pepper to taste
  • BECHAMEL SAUCE:
  • 2 tablespoons Butter
  • 2 tablespoons Flour
  • 1-1/4 cups Milk
  • 2 cups shredded Mozzarella Cheese
Twice Baked Potato Casserole
  • 8 potatoes medium sized, scrubbed and dried
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • ½ pound bacon cooked and chopped
  • 6 ounces sharp cheddar cheese shredded
  • ¾ cup mayonnaise
  • ¾ cup sour cream
  • 4 green onions sliced
  • salt and pepper to taste
  • Topping
  • ¼ pound bacon cooked and chopped
  • 2 ounces sharp cheddar cheese shredded
  • 2 green onions sliced
Crockpot Potato Soup
  • 5 large russet potatoes peeled and diced
  • 1 small onion diced
  • 2 cups chicken broth
  • 4 tablespoons butter
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup heavy cream
  • 1/3 cup sour cream
  • 1/4 cup flour
Instructions
Gratin Parmentier
In a large pot of salted boiling water, add the three potatoes and let boil for 15 minutes, just to par boil stage.
Preheat oven to 400 degrees.
Remove potatoes from water and set on a cutting board to cool enough to handle. Slice into 1/4" slices.
Grease baking dish. Cover the bottom of the dish with potato slices. Stand potatoes around the side of the dish also.
Mix together ground beef, parsley, paprika, salt and pepper. Form into 15 evenly-sized meatballs.
Bechamel Sauce:
Melt the butter in a saucepan.
Stir in the flour and cook, stirring constantly, until the paste cooks and bubbles a bit, but don't let it brown -- about 2 minutes.
Add the milk, continuing to stir as the sauce thickens.
Bring it to a boil.
Add salt and pepper to taste, lower the heat, and cook, stirring for 2-3 minutes more.
Remove from the heat.
Set a meatballs on top of each potato slice in bottom of glass dish. Wedge a potato slice between each meatball.
Pour bechamel sauce over each individual meatball, filling the pocket around it.
Add shredded cheese over top
Bake at 400 degrees for 45 minutes.
Twice Baked Potato Casserole
Preheat oven to 400 degrees
Rub potatoes with olive oil and salt and place on baking sheet.
Bake for 45 to 60 minutes or until tender when pierced with a fork, flipping halfway through. Let cool for 15 minutes.
Reduce oven temperature to 350°F.
Lightly grease an 9-inch square or 9 x 13 inch baking dish and set aside.
Cut potatoes into bite-sized pieces and place in baking dish. Its perfectly acceptable for the potato pieces to slightly fall apart.
Stir in mayonnaise and sour cream.
Stir the cheese, bacon and green onions into the potato mixture.
Top with shredded cheese and bacon for the topping.
Cover dish with foil and bake for 30 minutes, removing foil for the last 10 minutes.
Top with sliced green onions and serve.
Crockpot Potato Soup
Add the potatoes, diced onions, chicken broth, seasonings, and butter to your slow cooker.
Cook on low 4 to 6 hours, or on high 3-4 hours – until potatoes are soft.
30 minutes before it is done, in a small mixing bowl whisk the heavy cream, sour cream, and flour together. This will get thick.
Stir into the soup.
Cook the soup on high for 20 to 30 minutes until the soup thickens slightly.

    I will be trying the Twice Baked Potato Casserole which looks delicious. This is a very confusing format for presenting recipes.
