Cheesy Mashed Potato Bake

With the holidays just around the corner, I’m starting to get excited for some of my favourite tried and true recipes for the season. One of my go to recipes is always this cheesy mashed potato bake.


I like to think of this recipe as a jazzed up version of the classic you know and love. I mean..who doesn’t love a little extra cheese!? Topped with bacon bits and green onions…yummy!


I like this recipe since it came easily be made up to 2 days before you need it - just wrap it tight in plastic wrap before baking ahead of your dinner. It’s so easy!

Ingredients

  • 1-5 pound bag red potatoes; washed, peeled and chopped into 1 inch pieces
  • 5 strips of bacon
  • 2 cups shredded cheddar cheese (or favourite cheese blend); divided
  • 5 tablespoons butter
  • 1/4-1/2 cup of milk
  • 1/2-3/4 cup sour cream
  • 1/4 cup green onion, chopped
  • 1 tsp each; garlic powder, salt & pepper
Instructions

Cook washed, peeled and chopped potatoes until fork tender (about 20 - 25 minutes).
While potatoes boil, cook bacon until crispy. Once cooked, break into bite sized pieces and set aside.
Drain potatoes and transfer back into pot. Add in butter and begin to mash. Slowly add in milk and sour cream, mashing until no lumps or bumps remain.
Stir in 1 cup of shredded cheese to the potato mixture and add in spices. Stir to combine.
Transfer mixture into lightly greased 9x13 oven safe casserole dish. Top with remaining cup of shredded cheese.
Bake in a 375 preheated oven covered with foil for about 15 minutes and then uncovered until cheese is melty and bubbly.
Top with bacon and green onion. Serve hot and enjoy!
Tips
  • I like this recipe as a make ahead dish! Follow the steps through 5 but instead of baking, cover with plastic wrap and refrigerate until you are ready to bake (about 2 days in the fridge). To bake, preheat oven to 400 and remove plastic wrap. Cover with tin foil and bak covered for about 40 minutes, then uncovered for 20. Top with garnishes and enjoy!
