Grilled Peppers with Feta Cheese


These grilled bell peppers are a simple side dish that you can prepare when you don’t want to heat up the oven to make grilled stuffed peppers.

The peppers are halved and then grilled using the Hamilton Beach searing grill. Then, the peppers are sliced and feta cheese with a tangy dressing is added to the plate.


You can serve it as is or place it on a bed of lettuce or mixed spring greens for a light lunch.


This is such a simple recipe to make that you can have it ready in about 15 minutes. It can serve more or less depending on how many peppers you grill.

Because it contains basically peppers, feta cheese, and a dressing, this is a delicious low-carb side dish that we often enjoy year-round.

I love the color of yellow, orange, and red peppers combined. I think it makes for an attractive side dish.

But, you can really use any type of pepper for grilled peppers. Or, if you prefer, you could make grilled poblano peppers or even use mini bell peppers.

To turn this side dish into a lunch salad, you can always add olives, toasted pine nuts, and red pepper flakes.

  • Preheat your Hamilton Beach Electric Indoor Searing Grill to 350F.


  • Wash and slice your bell peppers in half.


  • Remove the seeds and the stem.

  • Toss the bell peppers lightly in your favorite Italian dressing or vinaigrette. I find using a plastic bag works best.


  • Place the peppers on the grill skin side up.

  • Lower the cover and cook for about 10 minutes per side.

  • Remove the peppers from the grill and slice them.

  • Add chopped mint or basil if desired.

How to store leftovers


Grilled peppers with feta is definitely best enjoyed hot right off the grill. But, if you do have leftovers, you can store them in an air-tight container in the refrigerator for 3 to 5 days.

When you want to reheat your grilled peppers with feta, place them in the microwave for a few seconds to warm them up. Then, place them on a bed of lettuce and serve. You may need to add a bit more Italian dressing when you serve them.
