Panera Dupe Broccoli and Cheddar Soup
I know it is the middle of summer but I was craving some broccoli and cheddar soup! You know I am all about home cooked meals without any additives and this one is easy peasy.
Start by chopping up 1/2 and onion and 4 cloves of garlic.
Sautee on low heat for 5 minutes with 1/2 a stick of butter.
This part already smells so good! I love cooked onions.
Once the onions and garlic are sauteed nicely, add 4 tablespoons (or quarter cup) of all purpose flour.
Then you will need to add 2 cups of broth. I happened to only have this miso ginger broth from Trader Joes (my absolute favorite) and it worked just fine. I think you can get away with any broth really, vegetarian if you are looking for a meatless option.
Then add 2 cups of milk (I used whole because that what I had) and stir it all together with some salt and pepper to taste.
Then add 3 cups of broccoli (I used frozen)
Now you will want to add a cup of shredded carrots but I actually didn't have any so I used shredded butternut squash, and guess what? It tasted great!
Then add some shredded chees and enjoy!
I also baked a fresh sour dough loaf to go along with the soup!

Ingredients
- 4 tablespoons butter ½ stick
- ½ medium onion chopped
- 3 cloves garlic minced
- 4 tablespoon flour
- 2 cups of broth
- salt and pepper to taste
- 2 cups of milk
- 3 cups broccoli florets (fresh or frozen)
- 1 large shredded carrot
- 1 cup cheddar cheese
Instructions
- sauté onion and garlic on low heat with melted butter for 5 minutes
- add flour, broth, milk and spices and stir
- add broccoli and shredded carrots
- cook for 30 minutes until broccoli is tender
- add cheese and stir in right before eating
