Orange soup with red (orange) lentils, sweet potatoes and carrots that are easily prepared, here is a recipe for a satisfying, healthy and delicious soup .Everyone is sure to know this soup and of course in many versions. I put my recipe for you here, after a lot of preparation and reaching the flavor I like best.

Of course, you can also add zucchini, red onions, and even one potato. I used to not add orange lentils, but I realized that it is much healthier and more filling that way.

The recipe is very tasty, and those who want to make it vegetarian or vegan, can put instead of cooking cream – coconut cream in the same amount. The textures are quite similar and the taste is excellent!!!

  • 1 medium chopped onion
  • 2 large chopped garlic cloves
  • Large peeled carrots cut into circles
  • Medium sweet potato peeled cut into cubes
  • 1 medium butternut squash cut into cubes
  • 1 leek cut into circles
  • 1 cup red (orange) lentils, well washed and drained
  • 6 cups (1.5 liters) boiling water
  • 1/3 cup coconut cream or cooking cream (optional)
  • 1 1/2 tsp. salt
  • 1/2 tsp. ground ginger
  • 1/4 tsp. turmeric
  • Black pepper to taste
Instructions
How to prepare:
Heat 2 spones of oil in a saucepan and add the white onion and leek
Fry a little
Add to the order for short frying: carrots, sweet potatoes and butternut squash and then the lentils.
Add the garlic and above all put the boiling water.
Wait for the whole pot to boil, then lower the heat and cook for about 40 minutes until all the vegetables are tender.
Then, grind the soup with a hand blender to get a thick broth and season.
During this time- you can add the cream.
Cook for another 10 minutes on low heat to get all the flavors.
