Italian Wedding Soup With Orzo
I was feeling some Italian Wedding soup and decided to make them with turkey meatballs. This dish can be made in one Dutch over to save on dishes.
I started by mixing a package of ground turkey, 1/4 cup shredded parmesan cheese, chopped garlic, chopped onion, 1/4 cup Italian bread crumbs, 1 egg and parsley in a bowl.
This is something you really need to do by hand! Once thoroughly mixed, start rolling into small balls.
Grease a Dutch oven and cook the meat balls trying to turn them so that each side become browned.
Once the meatballs are browned, place into another container.
Sautee chopped onion.
Add chopped celery and carrots and season with salt and pepper to taste.
Add the meatballs back in along with 2 cups of chicken broth and bay leaves. Simmer for 1 hour.
Once the carrots are tender, add a block of frozen spinach and cook for another 15 minutes.
Finally, add a cup of orzo pasta and cook for another 15 minutes.
Add some more shredded parmesan cheese!
This is even better with a slice of fresh sour dough bread!

The Meatballs
- ground turkey

The Soup
- 3 peeled carrots
- 3 celery stalks
- 2 cups chicken broth
- 1 cup orzo
- 1 block spinach
- 3 bay leaves
- salt and pepper to taste
Instructions
The Meatballs
- mix the ingredients in a bowl
- roll into small meatballs
- cook in a greased Dutch oven for 15 minutes until golden
- set aside
The Soup
- Sautee onions
- add carrots and celery
- add the chicken broth & spices
- add meatballs and cook for 1 hour
- add the spinach and cook for 15 minutes
- add the orzo and cook for another 15 minutes
