Super Easy Vegetarian Chili

I recently shared a very similar recipe (only it was the meaty version of this Mexican dish) but like many others, this year I want to work harder on eating as small amount of meat - and any other products of animal origin – as possible and slowly switch to a plant-based diet. However, I have to admit, I cheated this time a little bit because when it comes to chili, an unreasonable amount of sour cream is a must for me. But you can obviously leave it out or find a plant-based alternative to turn it inti a vegan recipe. In addition, this dish is perfect for anyone who is looking for meal-prep ideas as part of their New Year’s resolution, because chili can be stored for a long time.

Ingredients

  • olive oil
  • 1/2 red onion, chopped
  • pinch of brown sugar
  • 3 cloves of garlic, minced
  • 1 can of kidney beans, drained and rinsed
  • 1 can of white beans, drained and rinsed
  • 1 can of sweet corn, drianed and rinsed
  • 300 g of tomato sauce
  • fresh chili peppers, according to your taste
  • salt and pepper
  • pinch of cinnamon and cocoa powder, optional
  • 1/2 tsp. smoked paprika
  • 1 tsp. of dried cilantro
  • juicw of 1/2 lime
  • rice, tacos, avocado, sour cream for serving
Instructions

Heat the oil in a large pot over medium heat. Add the onion, a pinch of brown sugar and stir. Cook until the onion is caramelized, then add the garlic.
Add the beans, corn, tomato sauce and additional water to reach the perfect thickness.
Season with all the spices except the lime juice. Bring to a boil, cover, then simmer for 25 minutes. Lastly, add the lime juice.
Serve with cooked rice or tacos, avocado or guacamole, fresh chili, cilantro, etc. Don't forget about the sour cream. Enjoy :)

    I’m a vegetarian but not my family. I have always made only vegetarian chili, I add TVP ( texturized vegetable protein), it’s available in health food stores and gives it more texture not to forget the extra protein, I also like to add some cubed sweet potatoes, it balances the heat from the chili powder and some dried oregano
