I think it is safe to say that the majority of people have probably gone through a ramen-obsessed phase at some point in life. Or maybe that was just me??? It was the “perfect” meal in college because it was super cheap, quick, easy, and delicious. I definitely ate it too often so I got sick of it pretty quickly! Sometimes I still get a random craving for it though, so that’s when I make this homemade ramen stir fry. It gives you the feel of the traditional 13¢ ramen, but better. It really is the ultimate comfort food. Enjoy!
Ramen Stir Fry
Recipe details
Ingredients
For the chicken:
- 1 chicken breast
- 1 tsp olive oil
- 2 tsp garlic powder
- 1/2 tsp paprika
- Salt & pepper to taste
For the ramen:
- 3/4 cup chicken broth
- 2 Tbsp soy sauce
- 1 tsp rice vinegar
- 1 tsp brown sugar
- 1 tsp garlic powder
- 1 tsp onion powder
- Hot sauce to taste
- 1 packet of ramen noodles (discard the seasoning packet)
- 1/2 cup frozen stir fry veggies
Instructions
For the chicken:
- Rub chicken breast with olive oil.
- Season with garlic powder, paprika, salt & pepper.
- Air fry at 390° for 8 minutes on each side.
- Dice or shred into bite sized pieces.
For the ramen:
- In a saucepan over medium heat, add chicken broth, soy sauce, rice vinegar, brown sugar, garlic powder, onion powder, and hot sauce.
- While that’s simmering, boil the ramen noodles in a separate saucepan for 2-3 minutes.
- Strain and add to the chicken broth mixture.
- Steam the stir fry veggies according to directions.
- Then add the veggies to the saucepan, along with cooked chicken.
- Let all the flavors soak in for a few minutes then enjoy!😋
Tips
- The chicken does not need to be air fried. I just prefer it this way. You could also grill, bake, or fry it.
- Leftover rotisserie chicken works great and saves time instead of cooking your own chicken breast!
