Beef Stew With Veggies

Although it's summer and grilling season, I still just crave a good slow cooked Sunday dinner. Nothing beats a classic beef stew with vegetables in my opinion. These dinners are so perfect because you just leave them and let time do the trick. If you have a pressure cooker, it would definitely speed things up but if you aren't in a rush a slow cooker or good ol' oven will do the trick just as well.


This recipe is more of a French style way to cook beef, but there are so many variations. You can add whatever vegetables you enjoy or have on hand. I threw in some rice at the end of it too, but traditionally would just serve it on it's own.

Ingredients

  • 3 pounds cubed stew beef
  • 2 brown onions, cubed
  • 4 garlic cloves, minced
  • 2 tablespoons balsamic vinegar
  • 1½ tablespoons tomato paste
  • ¼ cup gluten-free or regular flour
  • 2 cups red cooking wine
  • 2 cups beef broth
  • 2 cups water
  • 2 bay leaves
  • 4 celery stalks, chopped
  • 3 carrots, peeled & chopped
  • 1lb baby potatoes, halved
  • spinach (optional)
  • salt & pepper to taste
Instructions

Preheat oven to 325F
Heat a pan with olive oil, then add the pieces of stew beef in small batches
Brown all sides then place into a roasting pan
Add all remaining ingredients to the pan then mix and cover with the lid
Cook until meat is tender when pierced with a fork
