Although it's summer and grilling season, I still just crave a good slow cooked Sunday dinner. Nothing beats a classic beef stew with vegetables in my opinion. These dinners are so perfect because you just leave them and let time do the trick. If you have a pressure cooker, it would definitely speed things up but if you aren't in a rush a slow cooker or good ol' oven will do the trick just as well.
This recipe is more of a French style way to cook beef, but there are so many variations. You can add whatever vegetables you enjoy or have on hand. I threw in some rice at the end of it too, but traditionally would just serve it on it's own.

Beef Stew With Veggies

Ingredients
- 3 pounds cubed stew beef
- 2 brown onions, cubed
- 4 garlic cloves, minced
- 2 tablespoons balsamic vinegar
- 1½ tablespoons tomato paste
- ¼ cup gluten-free or regular flour
- 2 cups red cooking wine
- 2 cups beef broth
- 2 cups water
- 2 bay leaves
- 4 celery stalks, chopped
- 3 carrots, peeled & chopped
- 1lb baby potatoes, halved
- spinach (optional)
- salt & pepper to taste
Instructions
- Preheat oven to 325F
- Heat a pan with olive oil, then add the pieces of stew beef in small batches
- Brown all sides then place into a roasting pan
- Add all remaining ingredients to the pan then mix and cover with the lid
- Cook until meat is tender when pierced with a fork
