If you are looking for a dinner idea that is quick and easy, and that will warm you up during these chilly evenings, you have come to the right place! This creamy rigatoni soup is so delicious. One thing I don’t like about making soup, is that it usually makes so much. I don’t want to eat leftover soup everyday of the week, no matter how good it is. So this soup is perfect in my household of two, because it only serves about 2-3. There’s enough for each of us to have a bowl and then one of us can have the leftovers for lunch the next day! And if you have a larger family or if you want a lot of leftovers, you can easily double or triple the recipe.

Ingredients

  • 1 Tbsp olive oil
  • 2 cloves minced garlic
  • 1/2 tsp Italian seasoning 
  • 1/2 tsp basil 
  • 2 cups beef broth 
  • 1 cup marinara sauce
  • 1 cup rigatoni (or whatever noodles you want)
  • 1/2 cup cooked ground beef
  • 1/4 cup heavy cream
  • 1/4 cup parmesan 
Instructions

In a saucepan over medium heat, sauté the garlic in olive oil.
Once it’s starting to get toasty, add in the seasonings, broth, and marinara sauce.
Bring to a boil and add the noodles.
Cook until al dente.
Add in the ground beef, heavy cream, and parmesan and let simmer until the parmesan melts.
Serve with extra parmesan, if desired.
