For this soup, you need turkey and a few other ingredients. The interesting about this soup is that it gets prepared in about an hour. How to Make Leftover Turkey Soup with Rice?

To prepare this soup, you need to collect all the ingredients and follow this recipe step by step.

Step One

Start the preparation of the soup by taking care of vegetables. Properly wash and clean leek, carrot, and potato. Dice them in a proper shape. Also, take out frozen peas. Put all the vegetables in a large bowl and keep them aside.

Step Two

In a pan, add olive oil. Let the oil get hot, and then add all the diced vegetables and frozen peas to it. Stir the vegetables for a while. After that, add washed uncooked rice to the pan. Stir everything for a minute or two.

Then you move towards adding spices to the soup. Start by putting dried oregano, garlic powder, chili flakes, salt, and pepper. Next, stir the ingredients and let them cook for a while. Complete this step by adding shredded turkey to the vegetable and uncooked rice mixture.

Step Three

After some time, add chicken broth and water to the pan. Then nicely stir all the ingredients and let the whole mixture get to a good boil for about 40 minutes. Once the soup is cooked, turn off the heat, and enjoy.

  • The more flavorful your meat is, the nicer your soup will be. So, if you use leftover apple cider brined whole roasted turkey, leftover smoked turkey breast, or maple-glazed roasted turkey breast, the soup will taste better.
  • Make sure that you use the turkey within 5-6 days of cooking it to prepare this soup.
  • You can add a punch of freshness to the soup by putting nicely chopped parsley in it.
  • It’s a low-fat soup recipe. But you can remove extra fat by letting the broth chill for a while. This way, the extra fat will form a layer on the top that you can easily remove.
  • If you like lemon, you can add zest and lemon juice.
  • Also, if you are using brown rice for this soup, increase the cooking time by 10 minutes.

If you cannot finish the soup in one go, you can definitely store it in the fridge by transferring it to an air-tight container. But remember that since this soup has cooked rice in, it might not taste the same after refrigerating.

  • 3 tbsp olive oil
  • 3/4 cup leek diced
  • 1 cup carrots diced
  • 1/2 cup potatoes diced
  • 3/4 cup peas frozen
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1 tsp chili flakes
  • salt and pepper to taste
  • 2 cups shredded cooked turkey
  • 3 cups chicken broth
  • 4 cups water
  • ¾ cup uncooked rice

In a large pot over medium heat, warm the olive oil and stir in the diced leeks, diced carrots, diced potatoes, and frozen peas.
Stir in the uncooked rice and season with dried oregano, garlic powder, and chili flakes. Add salt and pepper to taste.
Stir in the shredded turkey and mix until combined.
Pour in the chicken broth and water and let it boil the whole mixture for about 40 minutes.
