Summer Tomato Salad

This salad is a salad that we have on our menu in the restaurant. It’s composed of a mix of colorful cherry tomatoes and regular tomatoes. We season a salad with pickled lemons which is a very common addition to salads or meat dishes which really adds a great depth to the dish along with a nice tart bite. I will be posting as well a recipe for my pickled lemons, but for right now this recipe is a dish that you can buy all the ingredients separately at the supermarket and mix them with the fresh tomatoes and make your at home zaatar croutons and it’s really a great salad to enjoy during the summer. Here in Israel we like to put tomatoes in everything and it’s very important when we have them in season and we get to create many dishes with them. This specific dish is composed of tomatoes seasoned with olive oil lemon juice and the juice that is left from the pickled onions. We also add Syrian olives whichWhich gives a great depth to the dish. I recommend one serving this dish that you use a high quality olive oil And of course fresh lemon juice. You can find pickled lemons and pickles onions in any of your supermarkets or any specialty food stores. In terms of making the croutons I advise to take any leftover bread that you have in the house cut it into cubes season it with salt, zaatar, and olive oil and simply bake in the oven for about 7 minutes. You will then have the perfect garnish for your salad.

In this big dish specifically I finish with fresh parsley, but I also highly recommend finishing with fresh basil.

Ingredients
For the salad
  • 1 bunch yellow, green, and red cherry tomatoes
  • 3 regular tomatoes
  • 2 tablespoons diced pickled lemons
  • 2 tablespoons Syrian olives, pitted
  • 2 tablespoons pickled onions
  • salt pepper to taste
  • olive oil and lemon juice to taste
  • parsley or basil for finishing
  • 1 handful of homemade zaatar croutons
Instructions
For the salad
In a medium size mixing bowl mix everything together in a bowl, season with salt pepper, olive oil and lemon juice.
place in a serving bowl and then garnish with your fresh herbs and croutons.
Tips
  • Buy a great course sea salt so you can finish your salad with it. I love to finish all my dishes with a nice sprinkle of sea salt or maldon salt.
