Simple Caprese Salad

Those are all the things I crave when cooking during the summer time! I love heading to our local farmers market and selecting the freshest ingredients to create wash and simple dishes (which is how this recipe came to be!)


I love this twist on a classic Caprese salad. I love that the vinaigrette adds a little something and boosts the naturally delicious flavour of the tomatoes and mozzarella. Using fresh basil also kicks everything up a notch!


I love making this salad while I’m hosting as it can hang out in the fridge for up to 2 hours before serving too. Hope you enjoy this one!

Ingredients
For the vinaigrette
  • 3 Tbsp olive oil 
  • 3 Tbsp balsamic vinegar 
  • 1/2 Tbsp Italian seasoning 
  • Pinch of Chili flakes
  • Salt & pepper, to taste
For the salad
  • 4 cups cherry tomatoes, sliced in half 
  • 200 grams bocconcini 
  • 1/4 cup basil, thinly sliced (chiffonade) 
Instructions
For the vinaigrette
Whisk everything together until combined. I like to shake everything in a mason jar! Allow to set in the fridge while you prepare the rest of the salad.
For the salad
In a large mixing bowl, toss together sliced cherry tomatoes, bocconcini and basil.
Drizzle with vinaigrette and toss again.
Cover and let sit in the fridge for up to 2 hours before serving.
Drizzle with balsamic glaze before serving if you wish. YUM!
