Creamy Cucumber Salad

Summer may not officially be here, but as far as mother nature is concerned, it’s here!
The temperatures are heating up (84 today) and so is the humidity so when it comes to dinner, hubby and I are just fine with lighter fare.
Tonight we plan on grilling out and I’m whipping up the perfect side to go along with our Lemon-Garlic Tilapia.
This creamy cucumber salad is one I’ve been making for many years. (I know, I’m aging myself again!) It’s a family favorite, and it’s my favorite because it is so easy to make!
I usually use English cucumbers for this salad because #1 I don’t have to peel them, and #2 they are a bit sweeter-but our local grocery didn’t have any in stock so I picked up three medium-size cukes instead.
Creamy Cucumber Salad
Recipe details
Ingredients
- 3 medium cucumbers peeled and sliced thinly (Can also use 2 English cucumbers-no peeling necessary.)
- 1 medium red onion sliced thinly
- 1 Tablespoon fresh dill roughly chopped
- 1 1/2 cups Mayonnaise (I use light)
- 1/2 cup white sugar
- 4 Tablespoons vinegar
- 1 tsp kosher salt
- 1/2 tsp freshly ground pepper
Instructions
- Combine cucumbers, onion, and dill into a large mixing bowl. Add salt and pepper. In another small bowl, combine mayo, sugar, and vinegar. Whisk until smooth. Pour over cucumber mixture. Stir until well coated. Refrigerate until ready to serve.

This is exactly like my Grandmother and Mother have always made, except they use sour cream instead of mayonnaise. Honestly, the thought of that just doesn't sound great but worth a try one time I guess.
If you use miracle whip or a generic salad dressing, you can replace the Mayo, sugar and vinegar. Just easier. And I’ve made it this way for years. Yummy!
