Ingredients


  • 200 lentils (canned)
  • 100g halloumi cheese
  • 140g red onion
  • 300g cucumber
  • 60g sun-dried tomatoes
  • 1 tbsp olive oil
  • 2 tbsp lemon juice
  • fresh mint
  • dried parsley

Instructions


Slice the halloumi cheese and grill in on both sides for a couple of minutes until golden brown.
In the meantime, slice red onion, cucumber, and sun-dried tomatoes and combine in a bowl with lentils, olive oil, lemon juice, and mint.
Top up with halloumi cheese and season with dried parsley.
