Grilled Halloumi and Lentil Salad
Recipe details
Ingredients
- 200 lentils (canned)
- 100g halloumi cheese
- 140g red onion
- 300g cucumber
- 60g sun-dried tomatoes
- 1 tbsp olive oil
- 2 tbsp lemon juice
- fresh mint
- dried parsley
Instructions
- Slice the halloumi cheese and grill in on both sides for a couple of minutes until golden brown.
- In the meantime, slice red onion, cucumber, and sun-dried tomatoes and combine in a bowl with lentils, olive oil, lemon juice, and mint.
- Top up with halloumi cheese and season with dried parsley.

How much quinoa goes into this? The ingredient and amount is not listed in the recipe. Looks delicious!
