Easy Egg Salad

Hard boiled eggs are the easiest thing to cook and great to prep ahead. I wanted to put mine to good use and make a delicious egg salad. It's an easy recipe to make, yet a few tricks and ingredients can take this to the next level.

Instead of chopping up the eggs, try shredding them using a grater. This will change the texture completely and is my personal favorite way to make it. Next, for this recipe we'll be using 2 other main ingredients - Kewpie mayo & green onions. Kewpie mayo is the key to this egg salad as it is a Japanese mayo with a distinguished umami flavor.

  • 4 hard boiled eggs
  • 2 tbsp Kewpie mayo
  • 2 stalks green onion
  • salt & pepper to taste

Using a cheese grater, grate the hard boiled eggs
Chop your green onions then add them to the eggs
Add the mayo, salt, and pepper then mix together
Adjust according to taste then serve as is or as a sandwhich
