Lightened Up Chicken Salad

Chicken salad…it’s what's for lunch this week!
Chicken salad is one of those foods that many people have strong opinions on. You are either a plain Jane fan or like all of the fancy additions. I for one like it anyway I can get it, but have been craving a jazzed up chicken salad for awhile now.
Last weekend, I decided to create a healthier version with a lot of yummy additions. I created a lighter dressing using plain Greek yogurt and honey mustard, and added in grapes, celery, toasted pecans, and avocado! I am so happy with the end result and have been enjoying it as part of a well rounded lunch all week!
This is an easy, healthy lunch idea that you can prepare ahead of time on Sunday and pairs well with cucumbers, celery, fresh fruit and a few whole grain crackers!
The toasted pecans, and celery provide a savory crunch while the grapes provide a slightly sweet twist on this delicious chicken salad.
A few simple, healthy ingredients come together to create a easy and healthy lunch!
This chicken salad is great paired with some fresh vegetables and fruit or on a sandwich.
Lightened Up Chicken Salad
Recipe details
Ingredients
- The meat of one rotisserie chicken, skin removed and diced (about 5-6 cups chicken).
- 2 celery stalks, diced
- 1 cup grapes, sliced in half
- 1/3 cup toasted pecans, chopped
- 1/2 avocado, diced
- 1/4 cup light mayonnaise
- 1/2 cup low fat, plain Greek yogurt
- 2 tbsp. Fresh lemon juice
- 2 tbsp. Honey mustard
- Salt and pepper to taste
Instructions
- Mix chicken, celery, pecans, grapes and avocado together in a large bowl.
- Whisk Greek yogurt, mayonnaise, honey mustard, and lemon juice in a small bowl.
- Stir dressing into chicken mixture until combined.
- Season with salt and pepper
Tips
- Store in the refrigerator for up to 5 days.
