This summery grilled grain salad is sweet and savory with a hint of nuttiness
If you can’t tell from my recipes already, I am a huge fan of all grains! I love adding grains to my salads to bulk them up and help keep me satisfied for longer. They also add a nice texture and nutty flavor (depending on the grain).
This meal is dairy free and you can omit the chicken to make it vegetarian. It is a perfect side dish at a bbq or can be served as a meal on its own.

Ingredients
For the Chicken
- 2 chicken breasts using soy sauce
- 2 garlic cloves
- 2 tbsp maple syrup or honey
- sprig of fresh rosemary
- 1 tsp salt
- 1/2 tsp pepper
For the grains & veggies
- 2 cobs of corn
- 2 zucchinis
- 1 tbsp olive oil
- salt and pepper to taste
- 1 cup barley or other grain
- 2 cups arugula
- 1 shallot
For the dressing
- 1 tbsp honey
- 1 tbsp deli mustard
- 1/2 tbsp red wine vinegar
- 1/4 cup olive oil, honey
- 1 minced garlic clove
- salt and pepper to taste
Instructions
For the chicken, veggies, and grains
- Marinate chicken breasts using all listed ingredients for a minimum of 30 minutes
- Prepare veggies by slicing zucchinis in half lengthwise
- Dizzle corn cobs and sliced zucchinis with olive oil then season with salt and pepper
- Grill chicken, corn, and zucchinis on a bbq or grill pan until chicken is cooked through and vegetables are tender
- Cook grains of choice as per labeled instructions
- For the dressing, combine all listed ingredients and adjust according to taste
- Dice the cooked zucchinis and slice the corn kernels off the cob. Slice 1 shallot then mix all the veggies with the grains and arugula.
- Add sliced chicken and dressing then serve!

Is this calling for 1/4 C of both olive oil & honey, or a mix of the two in 1/4 C?
