Ingredients
For Salad
  • 10 Romaine lettuces, 
  • 1 Cucumber
  • 1 Tomato
  • 1 Red onions
  • 2 Chicken breast (cut into 1 inch pieces)
  • 1 tsp olive oil 
  • 2 Eggs
  • Green onions for garnish
For Salad Dressing
  • 2 tbsp Greek yogurt 
  • 1 tsp Lemon juice
  • 1 tsp Vinegar 
  • 1/2 tsp Extra virgin Olive oil 
  • 1/4 tsp crushed Black pepper
  • 1/4 tsp Crushed Chilli
  • 1/8 tsp Lemon zest
  • Black salt to taste
Instructions

Firstly wash and clean the chicken breast well.
To marinate, in a mixing bowl add the chicken breast with salt & pepper, lime juice & 1 tsp olive oil. Leave it aside for 15 to 20 mins. 
Grill the chicken on a grilling pan on medium heat until well done on both sides. this will take about 10 minutes. 
Meanwhile in a saucepot bring water to a boil and add eggs. It should be fine in 6 minutes or so. 
Once the eggs are done, peel them and keep it ready.
Chop all the veggies lettuce, cucumber, tomatoes, red onions and set aside.
In a small bowl, add Greek yogurt, Lemon juice, Olive oil, Black pepper, Crushed Chilli
Lemon zest, Black salt and mix well to combine. This instant dressing adds so much creaminess to the salad.
In a large salad bowl, add lettuces and all the veggies. Top with chicken and egg. Pour the dressing all over the salad and enjoy!
 If you have some fresh herbs such as fresh dill on hand, chop some and garnish your salad with them.
Tips
  • You can choose any type of greens like iceberg lettuce, butter lettuce, spinach & kale
  • Feel free to substitute vegetables as broccoli, green beans, brussels sprouts, carrots, bell peppers, mushrooms, and more!
  • If desired, you can use light sour cream or mayonnaise for your dressing (rather than Greek yogurt ).
  • You can choose a teaspoon of dijon mustard to this dressing for an extra flavour.
